The Last Word: Irving Convention Center’s Tom Meehan on Offering ‘World’s Largest Moon Pie’ During Monday’s Eclipse

“For a once-in-a-lifetime event, we wanted to do something out-of-the ordinary.”

Tom Meehan
General Manager
Irving Convention Center at Las Colinas
.…on offering the “world’s largest Moon Pie” to attendees at Irving’s Total Eclipse in the Park” event on Monday, April 8.

As of 6 p.m. Friday, the forecast for Monday’s total solar eclipse in North Texas is looking pretty dim. Both high clouds and low clouds are threatening to get in the way of the magical event, according to NBC 5 DFW.

But if you’re going to Irving’s free Total Eclipse in the Park, at least you’ll have one compensation: the World’s Largest Moon Pie. Don’t try to eat it all, though—it weighs nearly 200 pounds and clocks in at 365,042 calories.

Some 1,400 eclipse watchers at Irving’s Levy Event Plaza will be able to get servings from the historic pie, thanks to Meehan and his team.

“When I brought the idea to our chef, he shook his head and said ‘Never in my career did I think I’d do something like this,'” Meehan said in a statement.

ICC Executive Chef Eduardo Alvarez made five test runs before they finished their massive Moon Pie, which weighs up to 180 pounds and measures five feet in diameter by four inches thick. Its ingredients: “64 pounds of marshmallows, 128 eggs, 36 pounds of unsalted butter, 16 pounds of brown sugar, 60 pounds of all-purpose flour, and 45 pounds of marshmallow cream coated in 60 pounds of melted chocolate and 42 pounds of graham cracker crumbs,” according to Visit Irving.

Per serving, it’s 260 calories. But hey, who’s thinking about diets at a time like this? Especially if we’re celebrating a break in the clouds from 1:40 to 1:44 p.m.—or drowning our sorrows in cloud-obscured disappointment.

The free Total Eclipse in the Park will be held in Irving’s Levy Plaza on April 8 from 12 p.m. to 3 p.m. Other features of the event include live music from the Vegas Stars, gondola cruises, pedal boating, and free eclipse glasses, Visit Irving said. For more info, go here.
