PopUp Bagels Is Coming to Dallas’ Henderson Avenue

No sandwiches, no toasting, no slicing—PopUp Bagels keeps it simple by serving hot, whole bagels straight from the oven. Customers are encouraged to tear them apart and dip them into rotating schmears with a "grip, rip, and dip" approach.

PopUp Bagels—a brand launched in 2021 as a hobby project out of Adam Goldberg’s backyard window—is bringing its “grip, rip, and dip” bagels to Dallas in a new location planned at 2323 Henderson Avenue.

Based in Westport, Connecticut, the bagel brand already operates locations in New York City, Connecticut, California, Florida, and beyond. The Dallas location is the first of at least 12 planned locations across Texas, the company says, with Houston, Austin, and San Antonio slated for additional bagel outposts.

PopUp Bagels keeps it simple by focusing on “doing one thing really well”: serving hot, whole bagels straight from the oven. It offers no sandwiches, does no toasting, not even slicing—it just serves bagels that are meant to be torn apart and dipped into “rotating schmears.”

Crispy crusts and ‘epic schmears’

The brand promises crispy crusts, soft crumb centers, and an ideal proportion of seeds. Beyond the bagels, PopUp says it innovates with top brands, chefs, and tastemakers to create “epic schmears” that elevate the cream cheese experience with bold, unexpected flavors.

“Texas represents a significant opportunity for PopUp Bagels as we continue to scale the brand,” PopUp Bagels CEO Tory Bartlett said in a statement. “Launching in Dallas gives us a strong entry point into the state, with Houston following shortly after. We’re approaching this growth with the same discipline and focus on quality that have defined PopUp Bagels from the beginning.”

Lone Star Bagels is PopUp’s regional franchise partner

Lone Star Bagels is the exclusive franchise partner of PopUp Bagels across Texas, Colorado, New Mexico, Kansas, Missouri, and Oklahoma. Lone Star Founder Don Meij called Dallas “the ideal place to introduce the brand, with its strong and evolving food scene.”

“We believe PopUp’s energetic, high-quality approach to bagels will resonate here,” Meij added in a statement. “We’re also planning to expand into Houston and other communities across the state to share the Grip, Rip, and Dip experience.”
